Keep Christmas dinner sides warm before serving by using your oven set to a low temperature (around 90°C), placing heat-safe dishes inside and loosely covering them with foil to prevent drying. Alternatively, use chafing dishes with water pans underneath and lids to maintain even warmth for dishes like mashed potatoes and casseroles. Slow cookers set on "warm" are excellent for keeping vegetables and gravies hot; stir occasionally for even heat. Electric hot plates or warming trays can also maintain warmth for buffet-style serving, while insulated containers or thermal food carriers preheated with hot water are ideal for transporting and keeping sides warm until ready to serve.
Prep side dishes in advance for Christmas dinner by planning your menu and prioritising dishes that reheat well or can be assembled ahead without losing quality. Cook dishes partially if possible to avoid overcooking during reheating. Pre-chop vegetables, measure spices, and prepare sauces ahead of time, storing them in the fridge in airtight containers. Certain dishes like casseroles or rolls can be frozen unbaked in oven-safe containers or foil pans, then baked from frozen on the day of serving. Label containers with reheating instructions and coordinate timing to ensure all dishes are hot and ready simultaneously. Leave garnishing until just before serving to maintain freshness and presentation.
To prevent vegetable sides from becoming soggy, start with fresh, firm vegetables and thoroughly dry them after washing to remove excess moisture. Cook them at high heat through methods like roasting, sautéing, or grilling to quickly cook without steaming. Arrange vegetables in a single layer on baking sheets or pans to ensure even cooking and avoid overcrowding, which can lead to steaming. Opt for roasting over steaming to allow moisture to evaporate and enhance flavours through caramelisation. Avoid covering vegetables while cooking to prevent trapping steam, which can make them soggy. Following these steps will help maintain the texture and flavours of your vegetable sides, ensuring they are delicious and perfectly cooked.
Leftover Christmas side dishes typically keep well in the refrigerator for about 3 to 4 days if stored properly. It's important to promptly refrigerate leftovers within 2 hours of serving to prevent bacteria growth. Store them in shallow, airtight containers or resealable bags to maintain freshness and prevent contamination. When reheating, ensure leftovers are heated to an internal temperature of 74°C to safely consume. If you have more leftovers than you can use within this timeframe, consider freezing them for longer storage, where they can typically last 1 to 2 months.
