Christmas Dinner Gravy
A vegetarian xmas dinner gravy that will work for meat eaters, vegetarians and vegans. Made with caramelised vegetables, dried mushrooms and miso. Save the drained roasted veggies and use them to make my vegetarian stuffing, which really packs a punch.

Came here after I saw this on Instagram; you mention a rind in step 5 of the method but this isn't in the ingredients list. Would that be parmesan rind?

Hi Anya, we've left the Parmesan rind out of the base recipe to make it vegetarian friendly, but you can absolutely add one along with the soaked mushrooms in step 5 if cooking for meat eaters!

Made huge pot full of almost the recipe to split between beef, turkey and pork and veggie - i think it is going to be perfect just to add the appropriate juices as they come . Thank you.

Can you freeze this ahead of time ? Or by ahead of time do you mean the day before and just keep in fridge?

Hi Tessa, yes you can definitely make this ahead of time. It will keep in the fridge for a few days, or you can freeze it.
