We love a good curry and this quick and simple tomato curry is an extremely good one. Packed with chickpeas and plenty of spices, you can turn it into a range of different dinner recipes.

Ingredients

Makes a 6-portion batch recipe.

For The Base:

25g Fresh Ginger
6 Garlic Cloves
2 Green Finger Chillies
6 Cardamom Pods
800ml Coconut Milk
1 Tbsp Black Mustard Seed
2 Tbsp Curry Powder
800g Chickpeas
500g Cherry Tomatoes
1 Lime

For The Hearty Curry With Cumin Fried Egg

2 Eggs
2 Tsp Cumin Seeds
5g Fresh Dill
5g Fresh Coriander
1 Lime

For The Curried Pasta e Ceci

45g Pasta
10g Fresh Chives
1 Lemon
Chilli Oil, To Serve

For The Chickpea Curry & Peanut Coriander Chutney

20g Fresh Coriander
20g Salted Peanuts
1 Green Finger Chilli
1 Lemon
1 Tsp Ground Cumin
½ Tsp Sugar
40ml Water
40g Yoghurt
Naan, To Serve
