Roast Sweet Potato with Chickpea & Coconut Curry Recipe
A healthy, quick, vegan curry packed with flavour and goodness. You can make this for a quick lunch, but it's equally comforting for dinner. If you don't like sweet potato, swap it for baked jacket potato. And if you want to make it a little more indulgent, grate over some mature cheddar before drizzling over your favorite chilli oil.
