Update: we made this tonight, super easy and delicious. Will definitely add to our regular rotation! I added the cals up before with the specific ingredients we used and it came to ~550kcals.

Sooooooooo delicious! I added some smoked tofu on the side too as was so hungry and all together it was so, so tasty.
