I'm not going to lie to you, these are some of the most moreish nibbles I’ve ever made. The crispy outside gives way to an absolutely filthy cheese and cauliflower molten middles. Give them a go.

Would be great if the flour measurement for the sauce was specified … the 150g is for the crumb I assume? Or is it? Thanks

Can you cook these and then reheat in the oven? Or will they lose their crunch? Or can you have them covered and ready to fry for a couple of hours? Trying to think how to prep so I’m not in the kitchen for ages when guests are here.

Hi Claudia! For best results we recommend serving the croquettes fresh after frying. You could prep them earlier in the day and store them in the fridge before frying and serving immediately. You could try cooking them first and reheating them instead but it might effect the texture.
