Step 1.
Thinly slice the peppers, onion and garlic.
Step 2.
Heat the coconut oil in a lidded pan and, when hot, add the peppers and onion. Sauté until the vegetables are soft. Add the garlic and cook for 2 mins. Stir through the rice, turmeric and herbs. Season with salt, add the stock and bring to the boil.
Step 3.
Place the lid on, reduce the heat to medium and cook for a further 10 mins before turning down to the lowest setting for a further 5 mins. Turn off the heat, remove the lid to let out some of the steam and place the lid back on. Leave to sit for 5 mins before fluffing the rice with a fork.
Step 4.
Serve with our Caribbean prawn curry.
