This recipe borrows ideas from two of my favourite egg dishes: Tunisian shakshuka and Turkish çılbır. It also makes the most of seasonal winter produce.

Not a fan of spinach so braised the leek greens instead, and went pretty hard on the dill. Besides those two modifications, followed the recipe as is. This was delicious and super filling. I was worried it was going to be dry but it wasn't.
