Roasted the potatoes and veggies for 30 mins instead of 15. Replaced tomatoes w peppers as that's what I had at home. The whole family loved it!

Loved this! Quick enough to throw together on a week night, seemed to use up bits and bobs I had around, tasted just as great the next day cold for lunch. So good!

I had less potato so chorizo was more, and also more generous on the spinach and rocket. Lovely dressing!
