We’re really excited about this one. Oli Stephens, the founder of the original halloumi fry joined us for this episode of Street MOB. Oli began Oli Baba’s after travelling and living in the Middle East for 5 months, spending a lot of time in Tel Aviv. Here, he fell in love with vibrancy, excitement and the passion that people had for food and wanted to replicate that back in London and start something that would get people equally excited. The holy halloumi fry was born.
To make his Ultimate Halloumi Fries, he chops the halloumi into chip-like chunks which are then fried at a high temperature. The outside crisps up and the inside becomes soft and gooey. They are then tossed in sumac, dressed in za’atar-spiced yoghurt, pomegranate, mint and to top it off a squeeze of chilli honey. An incredible blend of sweet, spice and tang.
