DJ and entertainer DAMNSHAQ brought along artist Sam Wise to the MOB studio to show off their trademark chickpea curry. Sam and DAMNSHAQ are both regulars of the London music scene. They’re often out late performing and thus have to resort to bagging a crappy takeaway at the end of the night.
If you want to make something a bit healthier, then this store cupboard ingredient curry is the one. It’s delicious cold straight out of the fridge after a night out, or warmed up for lunch or dinner. It’s also an easy one to make vegan - just leave out the feta.
The curry starts off with the holy curry trinity: onions, garlic and chilli. They’re joined by hot and mild curry powder and fenugreek seeds. The fenugreek seeds add a nice warmth and creaminess to the curry. If you don’t have any in, don’t let it stop you from making it. Potatoes, carrots and chickpeas join the mix before the all-important coconut milk. Coconut milk gives the curry a creamy and thick texture and balances out all the flavours. Delicious.
Mix couscous with crunchy veg, salty feta, lemon zest and a touch of oil to make a fresh salad to serve the curry with. Get some roti on the side and you’re good to go. You’re going to love this one MOB.
