Whole Roast Aubergine With Harissa Chickpea Tabbouleh
Roasting whole aubergines seems like it might be a bit of a faff, but it’s actually very quick and easy in the air fryer. For a speedy weeknight meal we've served them with zesty tahini yogurt and stuffed them with a crispy harissa chickpea salad.

Fantastic recipe, will definitely add this one to our rotation!
I added a bit more garlic to the yogurt and made less of the tabbouleh (3/4) than the recipe calls and we still have leftovers for another time :)

Oh ma dayzzz! Amazingggg recipe. Don’t have an air fryer so took a little longer in the oven but wow that was good. Easy to follow but flavours coming through were 🔥👌🏽 Impressive dinner to serve up, a crowd pleaser for sure.
