This curry udon soup is inspired by Japanese Curry Udon, Malaysian Massaman curry and my love for turning vegetables into sauces.

We are a soy and gluten free family (gotta love allergies) and sub coconut animo for soy sauce and omit the tofu and serve it over rice, and it's so good and filling!
