Step 1.
Put the coffee, liqueur, sugar and salt into a bowl and whisk together until the sugar melts. Pour into a large baking dish and transfer to the freezer. Freeze for 3 hrs, making sure to scrape the mixture every 30 mins with a fork, breaking up any large clumps that form. The end texture should be flakes of fluffy ice. Once ready, serve immediately or cover with cling film and keep in the freezer until needed (you’ll have to scrape it again before serving).
Step 2.
Meanwhile, whisk the mascarpone in a bowl until smooth. Add the double cream, amaretto/marsala, and add as much icing sugar as you like. Whisk until soft peaks form.
Step 3.
Spoon the granita into cups or bowls, top with the whipped mascarpone cream and dust with cocoa powder.
