Was pleasantly surprised by the ease and tastiness of this dish! Really packed with fresh flavour, the vegetables were lovely and tender and the creaminess of the coconut and peanut were cut through with zesty lime and fragrant coriander. Overall seems quite healthy too which is a plus. Definitely will make again.

Great recipe. But adding the peppers & broccoli to the same dish means that the sweet potato & chickpeas can’t crisp up. So I’d prob put those in a separate dish next time.
