Really loved this, made something similar with mackerel and lemon and mustard instead of tuna and pesto and was also really good !

The recipe was just delicious. As I didn't have the Jalapeños and salad sprouts, I replaced it with finely chopped gherkins and rocket.

This was good. I don't think my sweet potatoes were giant, but they definitely needed an hour at 200C.
