Step 1.
Peel your orange for garnish.
Step 2.
Using a lighter, burn your rosemary sprig until it's smoking a little, then upend your chosen glass and let the smoky flavour take hold.
Step 3.
When you think it's smoky enough, put your glass right way up again and pour in your maple syrup and Angostura bitters.
Step 4.
Add a large ice cube and the orange peel.
Step 5.
Stir for 2-5 minutes to allow the ice to melt, chilling the rum and letting the flavours mellow.
Step 6.
Add in your rosemary sprig and enjoy.
