Smashed Sausage Tacos with Feta Crumble

Squeeze the chorizo sausage meat out from the sausage casings into a bowl (use regular pork sausages if you prefer). Discard the casings. Divide the sausage mixture equally between the tortillas then spread the meat onto the tortillas so you have an even layer on each. Sprinkle ¾ of the seasoning packet onto the sausage side of the tortillas.

Heat the olive oil in a small saucepan set over a medium heat until it just reaches smoking point. Meanwhile, thinly slice the cabbage and avocado. Toss the cabbage with some salt and lime juice. Thinly slice the spring onion and mince the coriander. Add both to a bowl with the sesame seeds, crumbled feta and remaining seasoning packet. Pour the smoking hot oil over and toss together.

Place a frying pan over medium-high heat with a drizzle of olive oil. Once hot, add the tortillas in batches, sausage meat side down, and cook for 3-5 mins until golden-brown. Flip and cook the tortilla side for a couple of seconds until golden. Transfer to a plate and cover. Continue until all the tortillas are cooked.

Serve the tacos with the cabbage slaw and some sliced avocado. Add as much fruity salsa as you want and any remaining feta or lime wedges.
