When I saw the ingredient list I was skeptical of its loose Mexican but also maybe Vietnamese influence? But it was actually so so so good. I added a little green salsa / lime crema because I think that belongs on all sea-based tacos, but it was a banger even without.

Question - if I want to batch and freeze these should I freeze BEFORE cooking the prawn schmear or AFTER cooking?

Oh, you really did that. I’m not gonna lie, I did shout at the first taco because the prawn mixture kept falling off, but practice makes perfect, baby (plus it tastes the same regardless)
Once I got into it, these were delicious and actually pretty easy to make - and the star of the show? The burnt tomato salsa, wowow - such an amazing flavour, fresh and a little zingy, it really tied the dish together. I also topped with some crushed tortilla chips for a little added crunch

These slappppp. Fiddly but fun to make. I added some of the Mexican Cholula hot sauce on top which goes well
