Savoury Hong Kong-Style French Toast
Step 1.
Preheat your oven to fan 180°C. Grate the Cheddar cheese and finely slice the chives.
Step 2.
Spread the butter and marmite on both sides of two slices of bread, and on one side of the remaining four slices.
Step 3.
Take a slice that has only been buttered on one side, place it butter-side up, add one-quarter of the grated cheeses onto it and top with a slice of bread that has been buttered on both sides. Top with more cheese and place a slice of bread that has only been buttered on one side. Make two sandwiches like this.
Step 4.
Crack four eggs into a shallow dish, season with salt and pepper, and add the chives. Whisk together until thoroughly combined. Dunk the sandwich in the egg mixture until all sides are coated.
Step 5.
Drizzle 4 tbsp of oil into a frying pan so that the bottom is covered, place over medium-low heat. Once hot, add the sandwiches in, cook on all sides until golden and the cheese has melted, 5-7 mins.
Step 6.
Once cooked, place them onto a baking tray, turn the oven off and slide them in to keep them hot.
Step 7.
Return the frying pan to a medium-high heat with another 2 tbsp of oil. Once hot, crack the remaining eggs in and fry until the whites are cooked through and the yolks are still soft, 3-4 mins.
Step 8.
Top the cheesy, savoury Hong Kong-style French toast with your fried egg and tuck in.
