Step 1.
Start by making the sausage ratatouille traybake. Heat the oven to 180°C. Roughly chop all your vegetables and chuck them in a baking tray
Step 2.
Add the sausages, rosemary, bay leaves, tinned tomatoes and whole garlic clove to the tray. Mix everything together and get it in the oven for 45 mins, then remove and set aside. Optional: if you're batch cooking the sausage ratatouille traybake for the week, portion it out into Tupperware containers now.
Step 3.
Turn the oven temperature up to 220°C.
Step 4.
Split the ciabattas into half lengthways and open up into sandwiches. Drizzle with olive oil and load up with the traybake veggies. Cut the sausages into halves, lengthwise, and put them on top of the veggies.
Step 5.
Tear over the mozzarella, season with salt and pepper and slide into the oven for 5-6 mins, or until perfectly golden.
Step 6.
Meanwhile, finely slice the red onion and chilli and toss into a bowl with the rocket. Dress with salt, lemon juice, and olive oil and toss together.
Step 7.
Load the rocket salad into the warm sandwiches and get stuck in.
