This is a recipe that seems so sophisticated but is simple to make. I made the caramel the night before I assembled the cheesecake and baked. It was better for me than having to wait for it to cool. The bonus was that this is a very nice caramel sauce in its own right - for ice cream or to step up a basic sponge or make brownies a desert. Highly highly recommend this.
