We had Ruben's Reubens in the studio making his take on a reuben sandwich using up his leftover roast chicken. Give this one a go.

Sauerkraut
Emmental

Step 1.
Finely dice your shallot and gherkin.
Step 2.
Combine all the ingredients for the Russian dressing and give it a mix. Season with salt and pepper.
Step 3.
Shred your chicken pieces and add them into the bowl of Russian dressing. Set aside.
Step 4.
Spread some butter onto both sides of your sourdough slices.
Step 5.
Spread some of the dressed chicken onto one slice of bread before topping it with the sauerkraut and a few slices of cheese. Cover with the other slice of bread.
Step 6.
Get it in a toastie machine or in a hot pan, fry until both sides are golden and the cheese is melted. Serve and enjoy!
