Step 1.
First, grate the potatoes and onion into a bowl.
Step 2.
Using a clean tea towel, squeeze as much liquid out of the potato mixture as possible. You can do this is in a couple of small batches. Place back into a large bowl.
Step 3.
In a separate bowl, crack the eggs and give them a whisk.
Step 4.
Add the eggs, flour and salt to the potato then give it a good mix.
Step 5.
You should be able to form some loose patties with the mixture. Feel free to add a little more flour if you think it needs more binding.
Step 6.
Once you’re happy with the mixture, place a large frying pan on medium heat and fill with about 2 inches of oil.
Step 7.
When the pan is hot, squeeze a golf ball-sized amount of mix between your palms to make a patty. Place carefully into the oil and repeat until the pan is full (leaving a bit of space between each latke).
Step 8.
Fry for about 5 minutes, or until golden, then flip and do the same again.
Step 9.
Remove to a kitchen paper-lined plate and season with a little more salt.
Step 10.
Serve with your condiment of choice, but traditionally these are enjoyed with apple sauce and sour cream!
