The best side dish to serve at any Mexican meal. At home there is always some fried beans in the fridge. I grew up eating fried pinto beans, as I am from the north of Mexico, but black beans are just as good. Traditionally they are fried with pork lard, but frying them with a good vegetable oil is fine. Beans are always present on a Mexican table, especially when having a feast.

Step 1.
Finely chop the onion. Heat the oil in a large saucepan set over a medium heat. Add the onion and fry for 2 mins, stirring to avoid burning.
Step 2.
Add the beans and their bean juice, then season with the salt (only if using unsalted canned beans, otherwise skip the salt).
Step 3.
As soon as the mixture starts boiling, lower the heat and mash with a potato masher until the beans are creamy and smooth.
Step 4.
Serve as a side dish as is.
