We’ve cooked this a few times and really enjoy it. To add more flavour we boil the quinoa in vegetable stock and fry the prawns with salt, pepper, fajita seasoning, chipotle chilli flakes, chilli powder for a kick. It keeps really well to the next day.

Great recipe ! Although, noting, that if you want a more salad-like texture it's best to add less quinoa. I added 300 gr as said above and it's a bit too much, as per my taste. If you like like more bowl-like meals — go for the full 300 gr.
