Step 1.
Use an electric whisk to beat the butter in a large mixing bowl for 4–5 mins on high speed.
Step 2.
Sift in the icing sugar and add the ground almonds, vanilla and a little splash of double cream. Beat on a low speed and continue to add double cream gradually until you reach your desired thickness. Beat for a further 3 minutes, until smooth and light.
