Step 1.
Measure 750ml of water into a large saucepan. Bring to the boil and season with salt. Drop in the orzo pasta. Cook for 7–8 mins, until you are left with around 100ml of water and the orzo pasta is nearly cooked
Step 2.
Meanwhile finely grate the Parmesan cheese onto a chopping board. Crush the peppercorns, and then toast them in a pan with no oil, until they start smoking.
Step 3.
Once the orzo is ready, lower the heat to medium and stir in the butter. Once melted, stir in the Parmesan in three additions, waiting for the first to melt before adding the next one. Once all the Parmesan has been added you should be left with a silky, glossy sauce. Add a splash more water if the sauce looks a little thick.
Step 4.
Stir through the cracked black pepper and finely grate in the lemon zest. Spoon the orzo into four bowls. Heaven.
