Step 1.
Add the American cheese and vegetable oil to a high speed blender and blitz until smooth.
Step 2.
Tip the egg yolks into a bowl. Add a small squeeze of lemon juice and whisk together, then slowly trickle the cheese and oil mix into the bowl, whisking with every splash until it begins to emulsify and come together to make a thick cheesy mayo.
Step 3.
Season with salt and add more lemon juice to taste.
