Marmite Chicken
Marmite is a brilliant ingredient to use in a sauce. Savoury, umami heaven. The vinegar and spring onion cuts through the richness. A lovely little mouthful.

Could you replace marmite with miso? If so, what quantities would you suggest?

Hey Elliot! You defo could! I would recommend starting with 1 tbsp of white miso and working your way up if its not enough.

Made this for the first time tonight, I used the air-fryer instead of oil frying which was messy, but seemed to work well in the end. I'd seen other notes commenting on the dish being too salty, but with ingredients like marmite and soy sauce I'm not really sure what they were expecting! Personally, I loved it and would make again. Definitely worth whipping up a cucumber salad on the side as it cuts through the richness of the sauce.

Would this work with Bovril if I don’t have Marmite?

Hi Sasha! Yes, it would! Bovril can be used as a substitute for Marmite, but do keep in mind that it has a meatier, slightly different flavour profile. If you're using Bovril, start with a smaller amount and adjust to taste, as it can be saltier and more intense.

Nice flavours but waaaaay too salty. And I absolutely love salt but both my wife and I found it too salty, sadly. Won’t be making again.

Hi Nicole, sorry you found it too salty. It's always really helpful to taste the sauce before you toss the chicken through - We've found that different brands of soy sauce have different levels of salinity.

Ignore the peas. I had just got back from South America and was in need. The smacked cucumber is probably a more appropriate side.
