For The Kofta:
Step 1.
In a large mixing bowl, combine the minced lamb with the salt, 7 spices mix and black pepper. Use your hands to make sure all ingredients are mixed well.
Step 2.
With a sharp knife, finely dice the white onion and add to the mixture.
Step 3.
Finely slice the garlic and add to the bowl. Mix together.
Step 4.
Meanwhile, get cracking with your musabaha sauce. In a saucepan, add the olive oil and diced onions. Sweat until the onions have a little colour. if you would like extra flavour, you can add an additional tsp of cumin seeds at this stage.
Step 5.
Add your 7-spice mix, black pepper, salt and tomato purée and mix well together.
Step 6.
Add the fresh tomatoes, and cook them for approximately 30 minutes, or until soft. Stir throughout. The tomatoes are going to naturally add water to the sauce, so stop cooking once it turns into a purée-like consistency.
Step 7.
Take your sauce off the heat, and tip into an oven-proof tray.
Step 8.
Shape the meat into balls and add to the tray with the sauce.
Step 9.
Cook in the oven for 35 mins at 200°C.
Step 10.
Serve with toasted pine nuts (optional) to add a crispiness and enjoy with the musabaha.
