Step 1.
Put the olive oil and flaked almonds into a saucepan set over a medium heat. Cook until the almonds turn a light golden colour, then add the cumin seeds and cook for 30 seconds until they stop shimmering. Remove from the heat and stir through the sumac and cinnamon. Season with salt and pepper.
Step 2.
Decant the hummus into a bowl and drizzle with the toasted almond and cinnamon oil. Serve with flatbreads.
