Step 1.
Preheat the oven to 190°C.
Step 2.
In a large bowl, squeeze the juice of the lemon and whisk it together with the honey, Dijon mustard, paprika, and olive oil.
Step 3.
Add the chicken thighs to the bowl and toss until well coated. Season generously with salt and black pepper.
Step 4.
Arrange the chicken thighs in a single layer on a baking tray.
Step 5.
Roast for 30 mins, or until the skin is crispy and the chicken is cooked through.
Step 6.
Serve immediately with lemon wedges on the side.
