Grab those frozen peas from the back of the freezer and make these unbelievably delicious cottage cheese pancakes. We’ve topped ours off with a runny egg, Greek yoghurt, avocado and crispy chilli oil.

Very tasty dish, I swapped the cottage cheese for ricotta because that is what I had and it worked perfectly, will definitely make again!

I loved the theory behind this but it just didn’t work, they didn’t fry and were mushy piles of pea smoosh that refused to cook. Don’t use fat free cottage cheese I guess?
