Hi Jessica! We haven't tested this recipe with an egg, but in theory it should. Try with 1 small egg? Let us know if you try it out that way :)

These are lovely and keep well for a few days. I’ve made them twice. First time they were a bit too sweet. Second time I used less sugar and replaced half the ground almonds with ground oat flakes … delicious!

Questionable to call it a healthy cookie when it has 3 tbsp of refined sugar.

I wondered that at first, but personally, I’d be okay with this as lots of protein & fibre offset the sugar

defo a 'healthy' cookie - just used plain flour as didn't have ground almond also needed 15mins in oven rather than 10mins
