Hi Darcy! Any of your favourite veggies would work e.g. courgette, bell peppers or portobello mushrooms. You could also use sweet potato (just cut them into small cubes and make sure they're fork tender before serving). Enjoy!

Hi Sally, thanks for flagging! There was a typo which should have said 100g (this isn't a strict recipe so add as many as you'd like – a small handful each is perfect). Enjoy!
