Step 1.
Add the green olives, parsley and pine nuts to a blender. Peel the garlic cloves and add in, then roughly chop the Parmesan and add. Add the white wine vinegar and season generously with salt and pepper.
Step 2.
Add ⅓ of olive oil and begin to blend, then continue to add olive oil until you get to a thick pesto consistency.
