Batch Recipe: Greek Tomato Rice Traybake
This Greek-ish inspired baked rice can be turned it into three very different recipes so you don't get bored. It’s packed full of tomatoes, olives and peppers so you can get your veg count up, plus I’ve bulked it out with a few extra.

I quite liked this dish. To enhance the flavor, I added some dollops of red pepper bruschetta, as well as 3-4 table spoons of the olive juice. I also needed to keep mine in the oven about 15 minutes longer than stated in the recipe in order for the rice to absorb the liquid.

Do you think this could work with tuna? I have memories of what I called Spanish rice when I was young and it sounds similar but was with tinned tuna

Hi Sarah, you could add tuna if you like. We'd recommend baking the rice first then stirring through the drained tuna before returning to the oven to crisp up for 10 mins. Enjoy!
