Step 1.
Lay the chicken thighs out on a baking tray. Add a drizzle of oil and evenly cover the chicken with ¾ of the Harissa & Honey seasoning mix. Place into the oven at 200°C for 20-25 minutes.
Step 2.
Meanwhile, cook your rice as per pack instructions and start with your salad.
Step 3.
For the salad, chop your tomato and cucumber into 1cm chunks. Then, finely chop your parsley and mint. Reserve a handful of mint and set aside. Add all salad ingredients into a small bowl, and add a small dash of oil and a squeeze of lemon.
Step 4.
Once the rice is cooked – add the remaining ¼ of the Harissa & Honey seasoning mix to the rice along with the reserved mint. Mix well.
Step 5.
Once the chicken is cooked thoroughly, plate up. Enjoy!
