Step 1.
Drain the chickpeas, saving the liquid, and add to a processor along with grated garlic, lemon or lime juice, yogurt and curry paste. Blitz until smooth, then add some reserved chickpea water to loosen.
Step 2.
Finely chop the chilli, julienne the ginger and finely slice the shallot. Heat 3 tbsp of olive oil in a pan over a medium heat, and fry the curry leaves, chilli, ginger and shallot until crispy, around 5 mins, then drain off on kitchen paper.
Step 3.
Spread the chickpeas in a bowl and top with the crispy bits. Enjoy.
