Crispy Chicken & Orange Salsa Tacos
Step 1.
Heat oven to 180°C. Line a baking tray with baking paper.
Step 2.
Remove the skin from the chicken thighs and stretch the skin flat on the baking sheet. Pat it dry and season with salt. Place another piece of baking paper on the top followed by another baking tray to weigh it down then pop in the oven for 10-15 mins.
Step 3.
Meanwhile, add the juice of ⅔ of the lime and the seasoning mix to a medium bowl and mix to combine. Add the chicken thighs and massage the marinade into the meat.
Step 4.
Slice the red peppers and peel and dice the orange. Add both to a bowl along with the salsa and mix to combine. Pick the coriander leaves and slice the remaining lime into wedges.
Step 5.
Heat a large pan with a drop of olive oil over a medium heat. Add the chicken and cook for 10 mins until charred. Remove from the pan and shred.
Step 6.
To assemble the tacos, fill the soft tortillas with the shredded chicken, fruity salsa and a few coriander leaves. Serve with a wedge of lime.
