This recipe is very similar to the tantanmen recipe made by seoyoung that I’ve made many times. I think the only difference is that she recommends unsweetened soya milk. If it curdles with oat milk maybe trying with unsweetened soya milk

It’s very tasty although many pans! It feels like the steps are not in the right order as the spinach and bean sprouts become cold.

Absolutely delicious. Next time, I would move step 1 to after the current step 4 to avoid having to bring the same pot of water to a boil twice.

Hi Ines! We'd recommend using whole, semi-skimmed or soy milk instead as it will give the broth a creamier, richer texture. Enjoy!

Attempted the broth twice and it curdled both times… not sure why, could it be because we used barista-style oat milk? Strained it and it was still very tasty, but i guess not as creamy as intended…

Thanks so much for the feedback Victoria! Adding the oat milk a little later, along with the chilli oil, and simmering it on a very low heat might help. We're going to retest the recipe and will let you know what we find!

Just FYI the intro says “oak” milk. I figured (and the recipe confirms) it should be “oat” milk.
