Completely useless recipe. I knew 1.5l of water (plus two tins coconut milk) was way too much so I’m kicking myself that I went with it. Tons and tons of liquid. This is either a proof-reading fail or the recipe wasn’t tested.

Absolutely gorgeous, only put one tin of coconut milk and only needed 500ml of water and put extra spinach in. Will become a staple meal in our house.

Can I use red lentils instead of puy?

Hi Helen! Puy or beluga lentils are ideal for this recipe as they hold their shape and texture when cooked better than most other types. You could use red lentils but they will cook quicker and may turn mushy, giving you a different texture.
