Step 1.
Pick the mint leaves and set the leaves. Reserve the mint stalks.
Step 2.
Heat the sugar, vinegar, salt and mint stalks in a small saucepan set over a medium heat. Bring the mixture to a boil then simmer for 3-5 mins.
Step 3.
Remove the pan from the heat and set aside until the mixture has cooled to room temperature.
Step 4.
Meanwhile, bring a medium pot of water to a boil over a medium heat. Fill a bowl with icy water.
Step 5.
Blanch the mint leaves in the boiling water for a few seconds then transfer to the icy water to refresh.
Step 6.
Squeeze the water out of the mint leaves, then finely chop and transfer to a bowl.
Step 7.
Set a sieve over the bowl and strain the cooled sugar and vinegar mixture through it, pouring the mixture over the mint leaves. Mix to combine.
Step 8.
Place the mint sauce in an airtight container and refrigerate for up to 3 days.
