Step 1.
Cook the couscous according to package instructions.
Step 2.
Finely mince the parsley. Zest the lemon into the yoghurt, season with salt and stir together.
Step 3.
Stir through the parsley, and veggies from the roast chicken into the couscous. Juice the lemon in and toss together with some of the roast juices. Taste and season with salt and pepper.
Step 4.
Reheat the chicken in the microwave until hot. If you don’t have a microwave tip the chicken onto a baking tray and roast at 220°C until hot, 5-10 mins.
Step 5.
Share the lemon yoghurt between plates, top with the chicken and serve with the couscous.
