Chicken Chimichurri Traybake
This dish is really easy to make. While the chicken and peas are roasting, get on with prepping the spicy chimichurri. After that, you’re basically done. Easy.

Made this for a family get together. Absolutely yummy. We made it in two large oven proof pans, and instead of roasting the rice and peas at the end, we rested the chicken thighs in the oven, added the rice and peas to the juices, and stir fried them both on the hob. We added a little chicken stock to the rice at this stage… it all worked really well and looks great.
The cooked radishes were a revelation!

This was just what I needed after a long day and it’s soo tasty. I didn’t have radishes so subbed in some peppers and a bit of leftover cabbage - but it still worked! Also used white sticky rice as it’s what I had. Definitely want to make the veggie version of this soon as a side dish - the lemon is what makes it for me 😍
