Chicken & Basil Stir Fry
Inspired by my favourite Thai dish, Pad Kra Pao, this is as good as meal prep gets. Ready in under 30 minutes and the flavour gets better the longer you leave it. Plus there’s barely any chopping (only the broccoli, but that’s easy.

This was delicious, but a little salty despite adding no extra salt and using low-sodium chicken stock. I think maybe I'll use 1 less tbs of oyster sauce and fish sauce to see if that helps. Otherwise it's delicious and a great meal prep lunch!

Couldn’t find chicken mince so used pork instead.
Found the Thai basil was a little too much of an aniseed flavour so would switch for normal basil next time. Easy and fairly quick mid-week dinner we all enjoyed.

Hard to buy chicken mince where I live in France, so I just chopped two chicken breasts up finely. Added some edamame beans, because I like them. Really tasty and easy dish to make.

I would guess fine, just make the rice fresh each time so it doesn't dry out. I'm planning on making this tonight and freezing half the meat
