Crispy Cheese & Marmite Gnocchi
Step 1.
Bring a pot of water to a boil. Season with salt and add your gnocchi. Cook for 2 mins then remove with a slotted spoon, saving the water.
Step 2.
Finely slice the leeks and spring onions. Separate the whites of the spring onions from the greens.
Step 3.
Heat a large non-stick frying pan over a high heat, add a glug of oil and your blanched gnocchi. Cook for 5 mins, tossing regularly until golden brown and crispy. Remove from the pan onto a plate.
Step 4.
Add another glug of oil and chuck in your leeks and the whites of the spring onion. Cook over a medium heat, stirring regularly, with a small pinch of salt. Cook until the leeks are a pale green and have sweated down, you don’t want too much colour, this should take around 5 mins.
Step 5.
Add the cream cheese and a big ladle of the gnocchi cooking water. Stir until loose and creamy. Add the Marmite and stir until incorporated. Cook until bubbling again, then grate in three-quarters of the cheddar.
Step 6.
Add the gnocchi and a big handful of spring onion greens to the pan. Toss in with plenty of freshly cracked pepper and lemon juice, and have a taste. Adjust the seasoning, adding a little more gnocchi water if the mix is too tight.
Step 7.
Serve with extra cheddar, black pepper and spring onion greens. Get stuck in.
