Simple and delicious! I added the juice of one lemon into the blender before adding to the pan with a handful of mushrooms, lemon zest and once finished I topped with a tin of mackerel. Yum!

Very speedy, very healthy and very satisfying. For extra calories, I added a bit of wholewheat pasta. For extra flavor, I added some lemon zest and a splash of the juice. I think that some sun-dried tomatoes would also add a nice touch, otherwise it might be a bit bland.
