My slightly elevated, slightly healthier twist on a cauliflower cheese, with extra protein from the butter beans and a little bit of something special with the preserved lemon salsa. If you want unadulterated comfort, you can always skip the salsa.

I think there’s a typo in the quantity of the milk as 70ml is nowhere near enough to make a béchamel.
